Who can perform these steps: Users with edit permissions for the spreadsheet.
Edit history allows you to access previous versions of a spreadsheet to see the edits made, who made the edits, and the edit time. A version is saved to edit history whenever content in a spreadsheet is edited, so you can recover deleted data, such as sheets that have been deleted.

II. Steps
View a previous version
Open the spreadsheet, click the ··· icon in the upper-right corner, and select Edit History.

Versions are arranged based on the edit time and include details about the editor. Click a version to see its contents.

Previous versions are grouped together by edit time. Click the > icon to expand the group to see individual versions.

Click the X icon in the upper-right corner of the list to close edit history.
Restore a previous version
Hover over the ··· icon in the upper-right corner, then click Edit History. Click the version you want to restore and click Restore this version.

III. FAQs
Who can see and restore previous versions?
Users with edit permission. If the deleted content is within the protected range of the sheet, only users with edit permissions for the protected range can restore that content.
Why can't I find the edit history button?
Only users with edit permission can view and restore previous versions. Users with view permission will not see the Edit History button in the menu.
After a previous version is restored, will content labeled as deleted be recovered?
No. Make sure you've selected the correct version before restoring it. If the version you selected shows the content is deleted, you will need to go to an earlier version to restore this deleted content.
If I restore a previous version, will it affect all sheets in the spreadsheet?
Yes. When you restore a version, all sheets will be restored to that version.
Can I delete a version?
No.
